Kidding

kid·ding \ˈki-diŋg\ noun : the art of bearing children

I'm always looking for easy, popular meal ideas. I feel like I make the same things over and over. Would anyone be willing to share any dishes that go over really well at your house?

We fool people with our "Chicken Parmigiana":

• Angel Hair Pasta
• Chicken patties/breasts
• Spaghetti Sauce
• Shredded cheese

Indeed, it's just spaghetti with chicken on top. Angel hair tends to feel a little lighter than spaghetti noodles. We cook the noodles, mix in sauce, put in casserole pan, layer pre-cooked chicken patties/breasts on top, add a dollop of sauce on each patty and cover with cheese. Bake covered on 350 for 40 minutes. Sadly, we rarely, if ever, use parmigiana cheese.

At our house we're big fans of anything out of the Indian cookbook. If you like spice, spice is not meant to be confused for heat, you're going to love an Indian Cookbook. Go to the Library. Find the cookbooks. Any dish with chicken is probably going to make your family happy. The only thing, and this could be a thing, is that you are probably going to need to make a trip to the grocery and get a little spendy in the spice aisle. But its so worth it. This is the dish we are having for dinner tonight.

Delicious Chicken Bits
1lb Chicken, can be a 2-3 Boneless Chicken Breasts, chopped into large ish chunks
1 tsp ground black pepper
1/4 tsp turmeric
1/4 tsp cayenne (alter as you choose but this isn't spicy hot)
1 tsp ground cumin
1 tsp thyme
1/4 tsp garlic powder
1 tsp bright red paprika
3/4 tsp salt
About 3 TBSP Oil

Preheat oven to 350. Chunk chicken breast, combine with all spices into bowl with 1 TBSP oil. Mix Well and let marinate together for 10-15 minutes. Heat 2 TBSP oil in large fry pan over high heat. When oil is very hot, put chicken into the pan. Fry quickly until lightly browned or white on the outside. Transfer chicken from fry pan to oven safe dish and cover with foil. Bake for 8-10 minutes until chicken is cooked through and serve with Rice. Delicious.

This can be kept in the baking pan with foil over it and taken out on a picnic or to a potluck.
